Black Bean and Mango Salad

Ingredients
- 1½ cups black beans, drained & rinsed
- 1½ cups corn
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- ½ red onion, chopped
- 2 Ataulfo mangos, diced
- ⅓ cup fresh cilantro, chopped
- 1 tbsp Taylor Pass Manuka Honey
- ¼ cup olive oil
- Juice of 3 limes
- ½ tsp chili powder
- Salt & pepper, to taste
Instructions
- In a large bowl, combine all salad ingredients.
- In a small jar, add dressing ingredients. Shake well until fully combined.
- Pour dressing over the salad, toss gently, and serve fresh.
