Gluten and Grain Free Banana Bread Waffles

Makes 6.

Ingredients

  • 2 medium ripe bananas, peeled mashed
  • 1 teaspoon vanilla extract
  • 4 eggs, lightly whisked
  • 1/2 cup milk (dairy or non-dairy)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon mixed spice
  • 2 cups almond meal
  • 1 cup tapioca flour
  • 1 rounded teaspoon baking powder
  • 3 tablespoons Taylor Pass Honey

Honey and Vanilla Mascarpone

To serve:

  • Berries, sliced banana, additional honey for drizzling

Instructions

  1. Whisk together the mashed banana, vanilla, eggs, milk and spices.

  2. Add the remaining ingredients and whisk until smooth.

  3. Heat and lightly grease the waffle maker with butter or coconut oil.

  4. Pour a 1/3 – 1/2 cup of batter (this will depend on the size of your waffle maker) into the machine and spread out a little. Cook for until nicely browned.

  5. Place in a warm oven to store while the remaining waffles are cooked.

  6. Mix together the mascarpone, vanilla and honey until smooth.

  7. Serve waffles with a big dollop of honey mascarpone, a scattering of fresh fruit and additional honey drizzled as desired.
