Taylor Pass Honey Olive Oil Honey Cake

Ingredients

  • 250 grams of sugar
  • 5 eggs
  • 150ml olive oil
  • 100ml Taylor Pass honey
  • 250 grams flour
  • 1 teaspoon cinnamon
  • 1 teaspoon fennel
  • Butter (to grease)
  • 1 cup walnuts
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat oven to 350°F.

  2. Blend sugar with eggs and stir well.

  3. Add a drizzle of olive oil and honey, stirring constantly, until ingredients are well mixed.

  4. Gradually add flour, cinnamon, fennel, and baking powder.

  5. Mix well.

  6. Fold in walnuts.

  7. Place batter into baking pan. Bake for 20-26 minutes or until a toothpick comes out clean. Cool.
