Raspberry Protein Chia Pudding With Mānuka Honey
A breakfast or snack that can be prepped ahead of time. Full of fiber and antioxidants, with the natural goodness of Mānuka honey.
Makes 3-4 generous servings
Ingredients:
9oz (250g) fresh raspberries
½ cup chia seeds
9.5oz (270g) high-protein Greek yogurt
1 cup (250ml) coconut milk
1 teaspoon vanilla extract
2-3 tablespoons Taylor Pass Mānuka Honey
Extra honey and fresh raspberries to serve
To Make:
1. Mash the raspberries in a large bowl. Pour in the chia seeds.
2. Add the yogurt, coconut milk, and vanilla. Stir very well.
3. Drizzle over the honey and stir again to incorporate.
4. Spoon the chia pudding into individual jars. Place in the fridge for 2-4 hours to thicken.
5. Just before serving, add an extra dollop of yogurt, a few fresh raspberries, and a good drizzle of Taylor Pass Mānuka Honey.
