bread and butter pudding

Taylor Pass Honey and Blueberry Bread and Butter Pudding

Prep Time , Cook Time , Serves 4-6.

Ingredients

  • 9 pieces of white bread (about 340g)
  • Butter as needed to spread
  • 2 cups milk
  • 2 eggs
  • 1 ½ teaspoon vanilla essence
  • ¼ cup Taylor Pass Creamed Clover Honey
  • 1 cup frozen blueberries
  • Extra honey for drizzling
  • Fresh cream for serving


Instructions

  1. Spread the bread generously with butter on both sides. Cut into quarters.
  2. Whisk together the milk, eggs and vanilla essence. Add the honey and whisk well.
  3. Layer the bread in a greased oven-proof dish. Sprinkle some frozen blueberries between each layer.
  4. Pour the custard mixture over the bread and berries.
  5. Press the bread down gently to ensure it’s all in the liquid. Leave to soak for 20 minutes.
  6. Place in the oven and bake for 25-30 minutes until golden.
  7. Drizzle with extra honey on top while still warm.
  8. Serve with cream if desired.
