Toasted muesli with fruit breakfast cups

Taylor Pass Honey Roasted Apple Crumble Breakfast Cups

Prep Time , Cook Time , Makes 3.

Ingredients

  • ½ cup sliced almonds
  • ¾ cup shredded coconut
  • ½ cup pumpkin seeds
  • 1/8 teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons Taylor Pass Clover Honey
  • 20-25g freeze-dried apple sticks, roughly chopped (we used Little Beauties)
  • To serve: coconut yogurt, additional honey for sweetening, apple slices, fresh blueberries

Instructions

  1. Preheat oven to 302ºF.

  2. Combine the almond slices, coconut, pumpkin seeds, nutmeg and cinnamon in a bowl and mix to combine. Add the vanilla and honey. Toss until evenly coated.

  3. Place on a lined oven proof tray. Bake for 15 minutes, tossing once while cooking.

  4. Leave to cool for 10 minutes before adding the apple pieces and mixing.

  5. To serve: swirl honey through the coconut yoghurt as desired. In small glasses alternate layers of crumble with big spoonfuls of the honey-sweetened yogurt. Finish with a piece of the crumble on top and some fresh blueberries.
