Taylor Pass Mānuka Honey No-bake Quinoa PB Slice


A nutritious freezer slice for dessert or snack time. This recipe combines the health benefits and beautiful rich flavor of Mānuka honey with quinoa, walnuts and oats. Simply mix together, press into a tin and top with dark chocolate for a dash of indulgence.

Ingredients:

1 cup cooked (and cooled) quinoa
1 ¾ cups rolled oats
1/3 cup chia seeds
½ cup roughly chopped raw walnuts
1/3 cup Taylor Pass Manuka Blend Honey
½ cup smooth natural peanut butter
180g dark chocolate
Freeze-dried raspberries for sprinkling

To make:

  1. Combine the quinoa, oats, chia seeds and walnuts in a bowl. Stir well.
  2. Pour over the Mānuka honey and the peanut butter. Use a spatula to mix together the wet and dry ingredients. You may need to use your clean hands if the peanut butter is very stiff.
  3. Line a dish with baking paper. Press the mixture in very firmly and evenly. Use the back of a spoon to smooth out the top. Place in the freezer for 1 hour to firm up.
  4. Melt the chocolate using a double boiler. Pour over the slice and use a spatula to spread out thinly and evenly sprinkle with freeze-dried raspberries. Place back in the freezer to set.
  5. Cut into pieces with a sharp knife.
  6. Slice must be stored in the freezer in an airtight container.
